I know it’s not soup season. It’s 90 degrees and humid. But I had two big heads of broccoli from the farm-share and a big block of delicious Irish cheddar cheese. It didn’t take much thought to put them together.
I loosely followed Pioneer Woman’s recipe. I do not have the magic touch with soup like my sister has. She can throw anything in a pot and make a delicious soup out of it. I usually end up with slop. This time, I did pretty well. It came out a little thick – I could have easily added more milk, but I had just gotten the flavors right so decided to just leave it.
A nice bowl of creamy soup on a summer evening? Why not!
