It’s that time of year when the crockpot has a permanent place on the counter. One of my favorites is chili. It is really versatile – you can make it with so many different ingredients – that it is a good way to use what you have on hand.

This time I used chicken thighs, black beans, tomato purée and diced tomato, and salsa. And leeks. And peppers. I think that’s it. I added cumin and chili powder, lots of black pepper and salt.

I prefer to eat my chili with an equal amount of chips. I just do! I’d really rather eat it as a dip for the chips – no spoon required!
